Small biscuits of round shape and flat, similar to other almond-shaped as "macarons" French and "amaretti" Italians, are made with a sweet paste made ​​up of ground almonds, sugar and egg whites, flavored with shavings of lemon peel, that are baked in the oven slightly to give the upper crust a crunchy texture.
