The "Palo" is a traditional drink of the Balearic Islands, prepared caramelizing sugar and infusion ​​of aromatic herbs as quinine and gentian calisaya, and fermenting in molasses alcohol. Its origin goes back to the sixteenth and seventeenth centuries, when it began its development as a remedy against paludism.

Currently the Palo liquor is consumed as a snack, alone, with ice or with soda, the presentation more widespread in the islands.
