Small biscuits of round shape and flat, similar to other almond-shaped as "macarons" French and "amaretti" Italians, are made with a sweet paste made up of ground almonds, sugar, and egg whites, flavored with shavings of lemon peel, that are baked in the oven slightly to give the upper crust a crunchy texture.The cookies "Amargos" by Menorca, which owe their name to that originally were made with bitter almonds, are a product traditionally prepared and consumed in the Christmas celebrations. However, as in its manufacture are used only egg whites, at the same time egg yolks are applied in elaboration the "pastissets", so they tend to be present at all celebrations of the island.

 

The recipe for this product is adapted to the diets of people with gluten intolerance, and it has taken great care to avoid any cross contamination.
