Quesos Quintana 

Hijo de F. Quintana is a company located in Alaior (Menorca) dedicated for more than a century to maturity and commercialization of artisan cheese with Protected Designation of Origin Mahon-Menorca. A product with Protected Designation of Origin (PDO), ) is a product closely related to the geographical area in which it occurs, in this case, the island of Menorca. Geoclimatic factors, soil characteristics, temperature, humidity, light, etc.., together with the human element and process of maturation and traditional practices, are a decisive condition for the final characteristics, aroma and flavor of Mahon-Menorca Cheese.

The elaboration from raw cow's milk, the uniqueness of the weather and the pasture quality from the island are the factors that make this cheese one of the most prized and valued of all existing varieties. The cheese is manufactured in the same cattle farms of Menorca, with a raw milk and curd to the same temperature of the milking, under the supervision and guidance of skilled from Quintana.


Once fitted the piece of soft cheese, moved to our premises where, at first, is placed in the dryer for your aerator. After a reasonable time, 2 to 3 weeks, according to the individual airy piece of cheese and type of drying, moves to the center of maturation, where for a minimum of six weeks plus, was smeared with olive oil and its will turn the piece from time to time. From the eighth or ninth week, the cheese begins to be marketed as semi type, whose presentation is orange rind, interior beige and bland flavor.
At the time of the year in which the milk is more concentrated, usually in the first months of the year, is selected the cheese which mature for about a minimum of five months, then sold as cured cheese, with a crust harder, a colour stronger and taste, of course, cheerful.
A selection of this cheese is transferred to a special centenary cellars, where which for a period of ten months or more, will continue to maturing and aging, resulting in a texture, color and taste, worthy of an exceptional product and different from other cheeses. It's a Aged Cheese.
